  • 1 cup Greek yogurt (plain, non-fat)
  • 115 grams Low-fat cream cheese
  • 2 pieces Garlic cloves (minced)
  • 1 tablespoon Olive oil
  • 0.25 cup Grated Parmesan cheese
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Wash the fresh spinach thoroughly and pat it dry.

Step 2

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 3

Add the minced garlic and sauté for 1-2 minutes, until fragrant.

Step 4

Add the spinach to the skillet and cook for 2-3 minutes, stirring frequently, until wilted. Remove from the skillet and let it cool slightly.

Squeeze out any excess moisture from the cooked spinach using a clean dish towel or paper towel, then chop the spinach finely.

Step 6

In a mixing bowl, combine the Greek yogurt, cream cheese, Parmesan cheese, lemon juice, salt, black pepper, and red pepper flakes (if using). Mix until smooth.

Step 7

Fold the chopped spinach into the yogurt mixture and stir until evenly combined.

Step 8

Transfer the spinach dip to a serving bowl. Optionally, garnish with a sprinkle of Parmesan cheese or red pepper flakes.

Step 9

Serve immediately with whole-grain crackers, vegetable sticks, or pita bread, or refrigerate for up to 2 days in an airtight container.
