Ingredients

  • 1.5 lbs Baby red potatoes
  • 1 cup Greek yogurt (plain, non-fat)
  • 1 tbsp Dijon mustard
  • 2 tbsp Olive oil
  • 1 tbsp Apple cider vinegar
  • 2 tbsp Fresh dill
  • 2 stalks Green onions
  • 2 stalks Celery stalks
  • 0.5 tsp Garlic powder
  • 0.75 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Thoroughly wash the baby red potatoes, leaving the skins on. Cut them into bite-sized pieces.

Step 2

Place the chopped potatoes in a large pot and cover them with water. Add a pinch of salt and bring the water to a boil over medium-high heat.

Step 3

Cook the potatoes for 12-15 minutes, or until they are fork-tender but not mushy. Drain the potatoes and let them cool to room temperature.

Step 4

While the potatoes are cooling, prepare the dressing. In a small bowl, whisk together the Greek yogurt, Dijon mustard, olive oil, apple cider vinegar, garlic powder, salt, and black pepper until smooth and well combined.

Step 5

Finely chop the fresh dill, green onions, and celery stalks. Add them to a large mixing bowl.

Step 6

Once the potatoes have cooled, add them to the mixing bowl with the chopped vegetables.

Step 7

Pour the yogurt dressing over the potatoes and vegetables. Gently toss everything together until the potatoes are evenly coated.

Step 8

Taste and adjust the seasoning with additional salt or pepper if needed.

Step 9

Transfer the potato salad to a serving bowl, garnish with a sprinkle of fresh dill if desired, and serve immediately or chill in the refrigerator for 1-2 hours before serving for a cooler dish.

Step 10

Store leftovers in an airtight container in the refrigerator for up to 3 days.
