Ingredients

  • 3 cups whole wheat flour
  • 1 cup bread flour
  • 2.25 teaspoons instant yeast
  • 1.5 cups warm water
  • 2 tablespoons honey
  • 1.5 teaspoons salt
  • 2 tablespoons olive oil
  • 0.5 cup sunflower seeds
  • 2 tablespoons flaxseeds
  • 2 tablespoons oats (optional, for topping)

Directions

Step 1

In a large mixing bowl, combine the warm water, honey, and instant yeast. Stir gently and let the mixture sit for 5-10 minutes until it becomes frothy.

Step 2

Once the yeast is activated, add the olive oil, salt, whole wheat flour, and bread flour to the bowl. Mix until a shaggy dough forms.

Step 3

Transfer the dough to a clean, lightly floured surface and knead for about 8-10 minutes until it’s smooth and elastic. Alternatively, use a stand mixer with a dough hook for the same amount of time.

Step 4

Add the sunflower seeds and flaxseeds during the last minute or two of kneading to evenly incorporate them into the dough.

Step 5

Lightly grease a large bowl with olive oil and place the dough inside. Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm spot for 1 to 1.5 hours, or until it doubles in size.

Step 6

Punch down the dough to release any air bubbles and shape it into a loaf. Place the shaped dough into a greased 9x5-inch loaf pan.

Step 7

Cover the pan with the towel or plastic wrap and allow the dough to rise again for 30-45 minutes, or until it rises just above the edges of the pan.

Step 8

Preheat your oven to 375°F (190°C). If desired, brush the top of the loaf with a little water and sprinkle oats on top for added texture.

Step 9

Bake the bread in the preheated oven for 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped on the bottom.

Step 10

Remove the bread from the oven and let it cool in the pan for 5 minutes. Then transfer it to a wire rack to cool completely before slicing.
