Ingredients

  • 200 grams rolled oats
  • 2 medium ripe bananas
  • 3 tablespoons runny honey
  • 2 tablespoons unsweetened peanut butter
  • 50 grams chopped nuts (optional, e.g., almonds or walnuts)
  • 50 grams dried fruits (e.g., raisins, chopped apricots, or cranberries)
  • 0.5 teaspoons ground cinnamon
  • 0.5 teaspoons vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tin (approximately 20cm x 20cm) with parchment paper.

Step 2

In a large mixing bowl, mash the ripe bananas with a fork until smooth.

Step 3

Add the runny honey, peanut butter, cinnamon, and vanilla extract to the mashed bananas. Stir until well combined.

Step 4

Fold in the rolled oats, chopped nuts, and dried fruits, ensuring all the ingredients are evenly distributed.

Step 5

Transfer the mixture into the lined baking tin and spread it out evenly, pressing down with the back of a spoon to compact it.

Step 6

Bake in the preheated oven for 20 minutes, or until the top is golden brown and firm to the touch.

Step 7

Remove the flapjacks from the oven and allow them to cool in the tin for 10 minutes. Then, transfer them to a wire rack to cool completely.

Step 8

Once cooled, slice the flapjacks into 8 equal bars and store them in an airtight container for up to 5 days.
