Ingredients

  • 1.5 cups Rolled oats
  • 1 cup Whole wheat flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 2 large Ripe bananas (mashed)
  • 2 large Eggs
  • 1 cup Greek yogurt (unsweetened)
  • 0.5 cups Pure maple syrup
  • 1 teaspoon Pure vanilla extract
  • 0.5 cups Chopped walnuts or pecans (optional)
  • 0.25 cups Dark chocolate chips (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, ground cinnamon, and salt. Stir to mix evenly.

Step 3

In another bowl, mash the ripe bananas until smooth. Add the eggs, Greek yogurt, maple syrup, and vanilla extract. Whisk until the mixture is well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix, as this can make the muffins dense.

Step 5

If using walnuts, pecans, or dark chocolate chips, fold them gently into the batter at this stage.

Step 6

Evenly divide the batter into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Enjoy your healthy, delicious muffins as a breakfast treat or a snack on the go!
