Ingredients

  • 1.5 cups Whole wheat flour
  • 0.5 cups Rolled oats
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.5 cups Unsweetened applesauce
  • 0.25 cups Honey
  • 0.5 cups Plain Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1 medium Granny Smith apple, peeled, cored, and diced
  • 0.25 cups Healthy caramel sauce (store-bought or homemade)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease with non-stick spray.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 3

In a separate medium mixing bowl, whisk together the egg, applesauce, honey, Greek yogurt, and vanilla extract until smooth and combined.

Step 4

Add the wet ingredients to the dry ingredients and gently fold together using a spatula or wooden spoon until just combined. Be careful not to overmix.

Step 5

Fold in the diced apple until evenly distributed throughout the batter.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.

Step 7

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Once the muffins are cool, drizzle the healthy caramel sauce over the top of each muffin. Allow the caramel to set for a few minutes before serving.

Step 10

Store leftover muffins in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
