Ingredients

  • 1.5 cups cooked black beans (drained and rinsed)
  • 1 cup old-fashioned oats
  • 0.5 cup natural peanut butter
  • 0.25 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 0.5 teaspoon baking powder
  • 0.5 cup dark chocolate chips
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper or lightly grease it.

Step 2

In a food processor, combine the black beans, oats, peanut butter, maple syrup, vanilla extract, cinnamon, baking powder, and salt. Blend until you have a smooth, well-mixed batter. Scrape down the sides as needed.

Step 3

Stir in the dark chocolate chips by hand to evenly distribute them throughout the batter.

Step 4

Transfer the batter to the prepared baking pan and use a spatula to spread it into an even layer.

Step 5

Bake in the preheated oven for 20 minutes or until the edges are slightly golden and the center feels set.

Step 6

Remove from the oven and let the bars cool completely in the pan before cutting them into 12 squares or rectangles.

Step 7

Store the bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They can also be frozen for longer storage.
