Ingredients

  • 1 cup Wheat bran
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.5 cup Brown sugar
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Plain Greek yogurt
  • 0.5 cup Low-fat milk
  • 1 teaspoon Vanilla extract
  • 1 medium Apple, peeled and finely diced
  • 0.5 cup Raisins (optional)
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, whisk together the wheat bran, all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

Step 3

In a separate bowl, beat the egg lightly, then stir in the brown sugar, applesauce, Greek yogurt, milk, and vanilla extract until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Do not overmix as this may lead to dense muffins.

Step 5

Fold in the diced apple. If using raisins or chopped walnuts, gently fold them in at this stage as well.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.

Step 7

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

These muffins can be served warm or at room temperature. Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
