Ingredients

  • 1 can (15 oz, drained and rinsed) Black beans
  • 1 teaspoon Ground cumin
  • 2 tablespoons Lime juice
  • 1 cup Plain Greek yogurt

  • 1 cup Guacamole
  • 1 cup Salsa
  • 1 cup Shredded Romaine lettuce
  • 1 cup Grape tomatoes (diced)
  • 1 cup Low-fat shredded cheddar cheese
  • 2 tablespoons Green onions (thinly sliced)
  • 2 tablespoons Cilantro (chopped, optional)

Directions

Step 1

In a medium mixing bowl, mash the black beans with a fork or potato masher until mostly smooth. Stir in ground cumin and 1 tablespoon of lime juice. Spread the black bean mixture evenly onto the bottom of a 9-inch round or square serving dish.

Step 2

In a separate small bowl, whisk together the Greek yogurt, taco seasoning, and the remaining 1 tablespoon of lime juice. Spread this mixture over the black bean layer.
