Ingredients

  • 300 grams Fresh spinach
  • 1 cup Whole wheat breadcrumbs
  • 1 cup Parmesan cheese (grated)
  • 2 large Eggs
  • 2 cloves Garlic (minced)
  • 0.5 cup Onion (finely chopped)
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper.

Step 2

Bring a large pot of water to a boil. Add the spinach and blanch it for 1-2 minutes until wilted. Drain and rinse under cold water immediately to stop the cooking process.

Step 3

Squeeze out as much excess water from the spinach as possible, then chop it finely and set it aside.

Step 4

In a medium skillet over medium heat, add the olive oil. Sauté the chopped onion and minced garlic for 3-4 minutes, or until softened and fragrant.

Step 5

In a large mixing bowl, combine the chopped spinach, sautéed onion and garlic, breadcrumbs, Parmesan cheese, eggs, salt, and black pepper. Mix well until the ingredients are fully incorporated.

Step 6

Using your hands, shape the mixture into small balls (about 1 inch in diameter) and place them on the prepared baking sheet.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the spinach balls are firm and lightly browned.

Step 8

Remove from the oven and let them cool for a few minutes before serving. Enjoy warm or at room temperature as a snack, appetizer, or side dish!
