Ingredients

  • 4 pieces Whole wheat English muffins
  • 4 pieces Eggs
  • 1 cup Low-sodium marinara sauce
  • 1 cup Shredded mozzarella cheese (part-skim)
  • 1 cup Fresh spinach leaves
  • 1 cup Cherry tomatoes
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Fresh basil leaves

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly coat it with cooking spray.

Step 2

Split the whole wheat English muffins into halves and place them cut-side up on the prepared baking sheet.

Step 3

Lightly toast the English muffins in the preheated oven for about 5 minutes, then remove them and set aside.
