  • 0.5 cups Split yellow mung dal
  • 2 tablespoons Ghee
  • 1 teaspoons Cumin seeds
  • 1 inch, grated Fresh ginger
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoons Coriander powder
  • 0.25 teaspoons Asafoetida (hing)
  • 1 small, diced Carrot
  • 1 small, diced Zucchini
  • 1 cup, chopped Spinach
  • 4 cups Water
  • 2 tablespoons, chopped Fresh cilantro
  • 1 teaspoons or to taste Salt
  • 1 tablespoons Lemon juice

Directions

Step 1

Rinse the basmati rice and mung dal thoroughly under running water until the water runs clear. Soak them together for 15 minutes, then drain.

Step 2

Heat a heavy-bottomed pot or a deep pan over medium heat. Add the ghee and let it melt.

Step 3

Once the ghee is hot, add the cumin seeds and let them sizzle until fragrant, about 30 seconds.

Step 4

Add the grated ginger, turmeric powder, coriander powder, and asafoetida. Stir for 10-15 seconds to release their flavors.

Step 5

Add the soaked and drained rice and mung dal to the pot. Stir well to coat the grains in the spices.

Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot partially, and let it simmer for 10 minutes.
