Ingredients

  • 4 large Egg whites
  • 200 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Cream of tartar
  • 50 grams Finely chopped toasted hazelnuts
  • 1 Pinch of salt

Directions

Step 1

Preheat your oven to 120°C (250°F) and line two baking sheets with parchment paper.

Step 2

In a clean, dry bowl, add the egg whites and a pinch of salt. Using an electric mixer, beat on medium speed until the mixture becomes frothy.

Step 3

Add the cream of tartar and continue to beat until soft peaks form.

Step 4

Gradually add the granulated sugar one tablespoon at a time, ensuring it dissolves completely before adding more. Continue beating until stiff, glossy peaks form.

Step 5

Gently fold in the vanilla extract and finely chopped toasted hazelnuts using a spatula. Be careful not to deflate the meringue.

Step 6

Using two spoons, drop small mounds of the meringue mixture onto the prepared baking sheets, leaving some space in between each mound.

Step 7

Bake in the preheated oven for 90 minutes, or until the meringues are dry to the touch and can easily lift off the parchment paper.

Step 8

Turn off the oven, crack the door open slightly, and let the meringues cool completely inside the oven to prevent cracking.

Step 9

Once cooled, store in an airtight container at room temperature for up to 1 week.
