  • 16 ounces Hawaiian sweet bread
  • 8 slices Bacon
  • 4 tablespoons Unsalted butter
  • 1 large Yellow onion
  • 3 Celery stalks
  • 3 cloves Garlic
  • 1 cup Crushed pineapple (drained)
  • 2 cups Chicken or vegetable stock
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

Cut the Hawaiian sweet bread into 1-inch cubes and spread them out on a large baking sheet. Toast in the oven for 10-15 minutes until lightly golden and dry. Remove and set aside to cool.

In a large skillet, cook the bacon over medium heat until crispy. Transfer the bacon to a plate lined with paper towels, leaving about 2 tablespoons of bacon grease in the skillet.

Add the butter to the skillet with the bacon grease and melt over medium heat. Dice the onion and celery, then sauté them in the skillet for 5-7 minutes until softened.
