Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 cups Cream of chicken soup
  • 1 cup Chicken broth
  • 1 cup Sour cream
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Long-grain white rice
  • 4 cups Water
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Chopped green onions
  • 1 cup Diced tomatoes
  • 1 cup Pineapple tidbits
  • 1 cup Chow mein noodles
  • 0.5 cup Sliced black olives
  • 0.5 cup Coconut flakes
  • 0.5 cup Slivered almonds

Directions

Step 1

Place the chicken breasts in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the chicken is cooked through and tender.

Step 2

Remove the chicken from the pot and shred it using two forks. Set aside.

Step 3

In a large saucepan, combine the cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, salt, and black pepper. Stir until smooth and heated through over medium heat.

Step 4

Add the shredded chicken to the sauce and mix well. Reduce heat to low and simmer for 5-10 minutes, stirring occasionally.

Step 5

While the chicken sauce is simmering, rinse the rice with water, then combine the rice and 4 cups of water in a medium saucepan. Bring to a boil, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and all water is absorbed.

Step 6

Assemble the Hawaiian Haystacks by starting with a base of rice on each plate. Spoon the creamy chicken mixture generously over the top.

Step 7

Set out the toppings buffet-style: shredded cheddar cheese, chopped green onions, diced tomatoes, pineapple tidbits, chow mein noodles, sliced black olives, coconut flakes, and slivered almonds. Allow individuals to customize their haystacks with their favorite toppings.

Step 8

Serve immediately and enjoy this vibrant and customizable dish!
