Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp sesame oil
  • 1 cup pineapple chunks (canned or fresh)
  • 0.5 cup pineapple juice
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 3 cloves garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp sesame seeds, toasted
  • 2 stalks green onions, sliced
  • 4 cups cooked white or brown rice (for serving)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the chicken thighs and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of sesame oil. Sauté the garlic and ginger for 1 minute until fragrant.

Step 4

Add the pineapple chunks, pineapple juice, soy sauce, honey, and rice vinegar to the skillet. Stir to combine and bring the mixture to a simmer.

Step 5

Return the chicken thighs to the skillet, nestling them into the sauce. Cover the skillet with a lid and let cook for 15 minutes, turning the chicken halfway through for even cooking.

Step 6

In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Remove the lid from the skillet and stir in the cornstarch slurry to thicken the sauce. Cook for an additional 3-5 minutes until the sauce is glossy and coats the chicken.

Step 7

Sprinkle the toasted sesame seeds and sliced green onions over the chicken before serving.

Step 8

Serve the Hawaiian Chicken Sesame over cooked white or brown rice for a complete meal.
