Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 can (20 oz) Pineapple chunks (in juice)
  • 0.5 cup Soy sauce
  • 0.25 cup Brown sugar
  • 0.25 cup Ketchup
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Ground ginger
  • 2 tablespoons Cornstarch
  • 3 tablespoons Water

Directions

Step 1

Place the boneless, skinless chicken breasts into a large freezer-safe bag or container if preparing to freeze, or directly into a slow cooker if cooking immediately.

Step 2

Drain the juice from the canned pineapple chunks into a bowl. Reserve the pineapple chunks for later and pour the juice into the bag or slow cooker.

Step 3

Add soy sauce, brown sugar, ketchup, garlic powder, and ground ginger to the bag or slow cooker. Mix well to coat the chicken evenly.

Step 4

If freezing, seal the bag or container, removing as much air as possible. Label it with the recipe name and cooking instructions, then freeze for up to 3 months.

Step 5

If cooking immediately, set the slow cooker to low and cook for 4-5 hours, or until the chicken is tender and cooked through.

Step 6

About 30 minutes before the cooking time is complete, mix cornstarch and water in a small bowl to create a slurry. Stir the slurry into the slow cooker to thicken the sauce.

Step 7

At the same time, add the reserved pineapple chunks into the slow cooker and stir gently to combine.

Step 8

Once the sauce has thickened, serve the Hawaiian chicken over cooked rice. Optionally, garnish with chopped green onions or sesame seeds.
