Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 8 rings pineapple rings (fresh or canned)
  • 1 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 1 teaspoon grated ginger
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks green onions (optional, for garnish)
  • 1 teaspoon sesame seeds (optional, for garnish)
  • 4 cups cooked white or brown rice (optional, for serving)

Directions

Step 1

In a bowl, whisk together the teriyaki sauce, soy sauce, honey, minced garlic, and grated ginger. Set aside.

Step 2

Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.

Step 3

Heat the olive oil in a large skillet or grill pan over medium heat. Once hot, add the chicken breasts and sear for 2-3 minutes on each side until golden brown.

Step 4

Reduce the heat to medium-low and pour the prepared teriyaki mixture over the chicken. Cover the pan with a lid and simmer for 12-15 minutes, turning the chicken occasionally, until the internal temperature reaches 165°F (74°C).

Step 5

While the chicken cooks, grill or sear the pineapple rings in a separate non-stick pan over medium heat for 1-2 minutes on each side until lightly caramelized. Set aside.

Step 6

Once the chicken is fully cooked, remove it from the pan and let it rest for 5 minutes. Meanwhile, allow the sauce in the pan to simmer and thicken slightly.

Step 7

To serve, place each chicken breast on a plate, top with two grilled pineapple rings, and drizzle with the thickened teriyaki sauce.

Step 8

Garnish with chopped green onions and sesame seeds, if desired. Serve with cooked white or brown rice for a complete meal.
