Ingredients

  • 4 medium leeks
  • 3 tablespoons unsalted butter
  • 2 cloves garlic cloves, minced
  • 1 cup dry white wine
  • 0.75 cup heavy cream
  • 0.5 cup chicken or vegetable stock
  • 0.5 cup Parmesan cheese, grated
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon lemon zest

Directions

Step 1

Trim the root ends and tough green tops of the leeks, leaving only the tender white and light green parts. Slice the leeks lengthwise, then crosswise into thin half-moons. Rinse thoroughly under cold water to remove any dirt or grit, then drain well.

Step 2

In a large sauté pan or skillet, melt the butter and olive oil over medium heat. Add the leeks and cook, stirring occasionally, for 6-8 minutes until softened but not browned.

Step 3

Add the minced garlic and cook for 1 minute until fragrant.

Step 4

Deglaze the pan with the dry white wine, scraping up any brown bits from the bottom of the pan. Simmer for 3-4 minutes until the wine is reduced by half.

Step 5

Stir in the chicken or vegetable stock and adjust the heat to low. Allow the mixture to simmer gently for 5 minutes.

Step 6

Pour in the heavy cream and stir until well combined. Simmer for another 4-5 minutes until the sauce thickens slightly.

Step 7

Stir in the grated Parmesan cheese, salt, pepper, thyme leaves, and lemon zest. Continue to cook for 2 minutes until the cheese is melted and the sauce is smooth.

Step 8

Taste and adjust seasonings as needed. Serve warm as a side dish or spooned over crusty bread for a light main course.
