Ingredients

  • 2 lbs beef chuck, cut into bite-sized cubes

  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 cup red wine (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the beef cubes dry with paper towels and season with salt and black pepper. Sprinkle with the flour and toss to coat evenly.

Step 2

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides, about 3-4 minutes per batch. Remove the beef from the pot and set aside.

Add the remaining tablespoon of olive oil to the pot. Sauté the onions, carrots, celery, and parsnips for 5-6 minutes or until softened.
