Ingredients

  • 4 pieces large baking apples (e.g., Honeycrisp, Granny Smith, or Braeburn)
  • 1 cup rolled oats
  • 0.33 cup brown sugar
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 cup chopped pecans or walnuts (optional)
  • 0.25 cup raisins or dried cranberries (optional)
  • 1 teaspoon vanilla extract
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a paring knife or an apple corer, carefully remove the core of each apple, leaving about 1/2-inch at the bottom to create a hollow cavity. Be sure not to cut all the way through.

Step 3

In a medium bowl, combine the rolled oats, brown sugar, melted butter, cinnamon, nutmeg, vanilla extract, and, if using, the chopped nuts and dried fruit. Stir until well mixed.

Step 4

Place the apples in a baking dish that fits them snugly. Spoon the oat mixture into the hollowed center of each apple, pressing gently to pack it in.

Step 5

Pour the 1/2 cup of water into the bottom of the baking dish. This will help steam the apples and keep them moist.

Step 6

Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 20 minutes, or until the apples are tender but still hold their shape and the filling is bubbling.

Step 7

Remove the apples from the oven and let them cool slightly. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
