Ingredients

  • 400 grams haricot green beans
  • 1 medium-sized yellow onion
  • 2 pieces garlic cloves
  • 2 tablespoons olive oil
  • 1 liter vegetable broth
  • 1 large potato
  • 2 tablespoons, chopped fresh parsley
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons cream (optional)

Directions

Step 1

Wash the haricot green beans and trim off the ends. Cut them into 2-inch pieces and set aside.

Peel and finely chop the yellow onion. Mince the garlic cloves. Peel and dice the potato into small cubes.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until fragrant and softened.
