Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup plain hummus
  • 1 cup cherry tomatoes
  • 0.5 medium cucumber
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley
  • 0.25 teaspoon crushed red pepper flakes

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and dry the sweet potatoes. Pierce each potato several times with a fork to allow steam to escape during cooking.

Step 3

Rub the sweet potatoes with olive oil and sprinkle with half of the salt and pepper. Place them on a baking sheet lined with parchment paper.

Step 4

Bake the sweet potatoes in the preheated oven for 35-40 minutes, or until they are tender when pierced with a fork.

Step 5

While the sweet potatoes bake, prepare the toppings. Dice the cherry tomatoes and cucumber into small pieces. Finely chop the fresh parsley.

Step 6

In a small bowl, mix the cherry tomatoes, cucumber, lemon juice, and remaining salt and pepper. Set aside.

Step 7

Once the sweet potatoes are done baking, remove them from the oven and let them cool for about 5 minutes.

Step 8

Slice each sweet potato down the middle lengthwise, being careful not to cut all the way through the bottom. Gently push the ends of each potato toward the center to open them up slightly, creating a pocket.

Step 9

Spoon about 1/2 cup of hummus into each sweet potato, spreading it evenly inside the pocket.

Step 10

Top the hummus with the prepared tomato and cucumber mixture. Sprinkle with fresh parsley and a pinch of crushed red pepper flakes for a touch of heat.

Step 11

Serve immediately and enjoy your Happy Healthy Hummus Tater!
