Ingredients

  • 4 heads Baby bok choy
  • 1 large Red bell pepper
  • 3 cloves Garlic
  • 1 inch piece Fresh ginger
  • 1 tablespoon Sesame oil
  • 2 tablespoons Soy sauce
  • 2 tablespoons Vegetable stock
  • 1 teaspoon Honey
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 1 teaspoon Sesame seeds
  • 2 stalks Scallions
  • 1 tablespoon Neutral oil (e.g., vegetable or canola)

Directions

Step 1

Wash and dry the baby bok choy. Slice them in half lengthwise.

Step 2

Cut the red bell pepper into thin strips.

Step 3

Mince the garlic and finely grate the ginger.

Step 4

In a small bowl, mix the soy sauce, vegetable stock, honey, cornstarch, and water until smooth. Set aside.

Step 5

Heat a large skillet or wok over medium-high heat. Add the neutral oil and swirl to coat.

Step 6

Place the baby bok choy cut-side down in the pan. Cook for 2-3 minutes until lightly browned, then remove and set aside.
