Ingredients

  • 1 cup Rice
  • 0.5 cup Chana dal (split chickpeas)
  • 0.5 cup Toor dal (pigeon peas)
  • 0.25 cup Urad dal (split black gram)
  • 0.5 cup Curd (yogurt)
  • 1 cup Grated bottle gourd (lauki)
  • 2 pieces Green chili, finely chopped
  • 1 teaspoon Ginger, grated
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 tablespoon Fenugreek leaves (methi), dry or fresh
  • 0.5 teaspoon Baking soda
  • 1 tablespoon Sesame seeds
  • 1 teaspoon Mustard seeds
  • 4 tablespoons Oil
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 cup Water

Directions

Step 1

Rinse and soak rice and all the dals (chana, toor, urad) in enough water for at least 6 hours or overnight.

Step 2

Drain the water and grind the soaked rice and dals to a slightly coarse batter using a blender or mixer. Add water as needed to get a thick pancake batter consistency.

Step 3

Transfer the batter to a large mixing bowl and add yogurt. Mix well, cover, and let the batter ferment for 6-8 hours in a warm place.

Step 4

Once fermented, add the grated bottle gourd, green chili, ginger, turmeric powder, red chili powder, fenugreek leaves, salt, and sugar to the batter. Mix well.

Step 5

Preheat the oven to 350°F (175°C). Grease a baking dish or deep pan with oil.

Just before baking, add baking soda to the batter and gently fold it in.

Step 7

In a small frying pan, heat 2 tablespoons of oil. Add mustard seeds and let them crackle. Add sesame seeds and sauté for a few seconds. Pour this tempering over the batter and mix gently.

Step 8

Pour the batter into the greased baking dish, spreading it evenly. Sprinkle a few more sesame seeds on top if desired.

Step 9

Place the dish in the preheated oven and bake for about 40-50 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.

Step 10

Allow the Handvo to cool slightly before slicing. Serve warm as a snack or light meal.
