Ingredients

  • 350 grams All-purpose flour
  • 170 grams Unsalted butter, chilled and cubed
  • 120 ml Ice-cold water
  • 1 teaspoon Salt
  • 250 grams Ground beef
  • 150 grams Potatoes, peeled and diced small
  • 100 grams Carrots, peeled and diced small
  • 50 grams Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoons Ground black pepper
  • 1 unit Egg, beaten (for egg wash)
  • 1 tablespoon Olive oil

Directions

Step 1

In a large bowl, combine the flour and salt. Add the chilled cubed butter and use a pastry cutter or your fingertips to blend until the mixture resembles coarse crumbs.

Step 2

Gradually add the ice-cold water, one tablespoon at a time, mixing until the dough comes together. Do not over-mix. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Heat the olive oil in a skillet over medium heat. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 5 minutes.

Add the diced potatoes, carrots, onion, and garlic to the skillet. Cook for another 5-7 minutes until the vegetables have slightly softened.

Stir in the thyme leaves, salt, and black pepper. Cook for 2 minutes more, then remove from heat and let the mixture cool completely.
