Ingredients

  • 1 lb Ground beef (80% lean)
  • 1 tsp Kosher salt
  • 2 tbsp Coarsely crushed black peppercorns
  • 2 tbsp Unsalted butter
  • 0.333 cup Heavy cream
  • 2 tbsp Cognac or brandy
  • 1 tbsp Vegetable oil
  • 2 units Burger buns
  • 2 units Lettuce leaves
  • 4 units Tomato slices
  • 2 units Pickles (optional)

Directions

Step 1

In a mixing bowl, lightly season the ground beef with 1/2 teaspoon of kosher salt. Divide the beef into two equal portions and gently shape them into patties, each about 4 inches wide. Be careful not to overwork the meat.

Step 2

Press 1 tablespoon of crushed black peppercorns into one side of each patty, ensuring an even coating.

Step 3

Heat a large cast-iron skillet over medium-high heat. Add the vegetable oil to the skillet.

Step 4

Once the oil is shimmering, place the patties in the skillet, pepper-side down. Cook for 3-4 minutes until a crust forms on the peppered side.

Step 5

Flip the patties and cook for an additional 3-4 minutes, or until the internal temperature reaches your desired doneness (145°F for medium). Remove the patties from the skillet and set aside to rest.

Step 6

Reduce the heat to medium and carefully add the Cognac or brandy to the skillet. Let it simmer for about 30 seconds, scraping up any browned bits from the bottom of the skillet.

Step 7

Add the unsalted butter and heavy cream to the skillet, stirring until the butter is melted and the sauce thickens slightly (2-3 minutes). Taste and adjust seasoning with additional salt if needed.

Step 8

Toast the burger buns in a toaster or on a dry skillet until golden brown.

Step 9

Assemble the burgers by layering a lettuce leaf, two tomato slices, and the cooked patty on the bottom half of each bun. Drizzle some of the au poivre sauce over the patty and top with pickles if desired.

Step 10

Crown each burger with the top bun and serve immediately with a side of fries or salad.
