Ingredients

  • 1 pound Ground beef
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 8 ounces Cremini or white mushrooms, sliced
  • 1.5 cups Beef broth
  • 0.5 cup Heavy cream
  • 4 ounces Cream cheese, softened
  • 1 tablespoon Soy sauce or coconut aminos
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Butter
  • 2 cups Zucchini noodles or cauliflower rice (optional, for serving)
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks, about 5-7 minutes. Drain excess grease if necessary, then transfer the browned beef to a plate and set aside.

Step 2

In the same skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.

Step 3

Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender, about 5 minutes.

Step 4

Return the browned ground beef to the skillet and stir to combine with the vegetables.

Step 5

Pour in the beef broth, soy sauce (or coconut aminos), paprika, salt, and black pepper. Stir and bring the mixture to a simmer. Let it cook for 5 minutes to allow the flavors to meld.

Step 6

Reduce the heat to low and stir in the softened cream cheese and heavy cream until the sauce becomes creamy and smooth. Be sure to stir well to avoid lumps.

Step 7

Taste the stroganoff and adjust seasoning with additional salt and pepper if needed.

Step 8

If using zucchini noodles or cauliflower rice, prepare them according to their package instructions or cook to desired tenderness. Serve the Hamburger Stroganoff over the low-carb base of your choice.

Step 9

Garnish with freshly chopped parsley, if desired, and serve immediately. Enjoy!
