Ingredients

  • 1 pound Ground beef
  • 1 medium White onion, diced
  • 2 cloves Garlic cloves, minced
  • 1 cup White rice, uncooked
  • 2 cups Beef broth
  • 1 can (10.5 oz) Cream of mushroom soup
  • 1 cup Frozen mixed vegetables
  • 2 tablespoons Soy sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 cup Shredded cheddar cheese (optional)
  • 1 tablespoon Butter or oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat 1 tablespoon of butter or oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened.

Step 3

Add the minced garlic to the skillet and cook for an additional 30 seconds, stirring constantly.

Step 4

Add the ground beef to the skillet. Cook and crumble it until browned and fully cooked, about 5-7 minutes. Drain any excess grease if necessary.

Step 5

Stir in the uncooked white rice, mixing it thoroughly with the beef and onion mixture.

Step 6

Add the beef broth, cream of mushroom soup, frozen mixed vegetables, soy sauce, salt, and black pepper to the skillet. Stir until well combined and the rice is submerged in the liquid.

Step 7

Transfer the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

Step 8

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 minutes.

Step 9

After 30 minutes, remove the foil, stir the hotdish, and check the rice for doneness. If the rice is not fully cooked, recover and bake for an additional 5-10 minutes or until done.

Step 10

If using shredded cheddar cheese, sprinkle it evenly over the top of the hotdish and bake, uncovered, for 5 more minutes, or until the cheese is melted and bubbly.

Step 11

Remove the hotdish from the oven and let it rest for 5 minutes before serving.

Step 12

Serve warm and enjoy this hearty, flavorful dish!
