Ingredients

  • 1 pound ground beef
  • 3 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 1.5 cups water
  • 2 teaspoons sesame oil
  • 1 medium onion, diced
  • 2 stalks celery, sliced
  • 1 medium bell pepper, sliced
  • 2 medium carrots, julienned
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 cups bean sprouts
  • 8 ounces chow mein noodles (cooked according to package instructions)
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil

Directions

Step 1

In a small bowl, mix together the soy sauce, cornstarch, and water until smooth. Set aside.

Step 2

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil.

Step 3

Brown the ground beef in the skillet, breaking it up into small pieces with a wooden spoon, until fully cooked. Drain any excess fat and set the beef aside on a plate.

Step 4

In the same skillet, add another tablespoon of vegetable oil. Sauté the diced onion, sliced celery, sliced bell pepper, and julienned carrots for 3-4 minutes, or until softened.

Step 5

Stir in the minced garlic and minced ginger, cooking for 1 minute until fragrant.

Step 6

Return the cooked ground beef to the skillet, mixing it with the vegetables.

Step 7

Pour the soy sauce mixture into the skillet. Stir well to coat the beef and vegetables, and let the sauce thicken, about 2-3 minutes.

Step 8

Add the cooked chow mein noodles to the skillet, tossing everything together until well-combined.

Step 9

Drizzle the sesame oil over the dish and gently mix it in.

Step 10

Finally, fold in the bean sprouts and cook for another minute, just until they’re warmed through.

Step 11

Garnish with sliced green onions and serve immediately.
