Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery, sliced thin
  • 2 small carrots, julienned or thinly sliced
  • 1 cup mushrooms, sliced
  • 0.25 cup soy sauce
  • 1 cup water or beef broth
  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons cooking oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 cups white rice or noodles (optional, for serving)

Directions

Step 1

Heat 1 tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-6 minutes. Remove the beef from the skillet and set aside, leaving some of the rendered fat in the pan.

Step 2

In the same skillet, add the remaining 1 tablespoon of cooking oil. Sauté the diced onion, minced garlic, and grated ginger for 2-3 minutes until fragrant.

Step 3

Add the diced green bell pepper, sliced celery, julienned carrots, and sliced mushrooms to the skillet. Stir-fry the vegetables for 5-7 minutes until they are tender-crisp.

Step 4

In a small bowl, whisk together the soy sauce, water or beef broth, and cornstarch until smooth.

Step 5

Return the cooked ground beef to the skillet. Pour the soy sauce mixture over the beef and vegetables. Stir everything together to evenly coat with the sauce.

Step 6

Simmer the mixture for 3-4 minutes until the sauce thickens and the vegetables are fully cooked but still retain some crunch.

Step 7

Season with salt and black pepper to taste, adjusting the seasoning as needed.

Step 8

Serve hot over steamed white rice or cooked noodles as desired. Enjoy your homemade Hamburger Chop Suey!
