Ingredients

  • 200 grams Fresh hamachi (yellowtail) fillet
  • 1.5 cups Sushi rice
  • 2 cups Water
  • 4 tablespoons Rice vinegar
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 2 teaspoons Wasabi paste
  • 0 Optional, for serving Soy sauce

Directions

Step 1

Rinse the sushi rice in cold water until the water runs clear. Drain well.

Step 2

Combine the rice with 2 cups of water in a rice cooker or pot. If using a pot, bring to a boil, then reduce heat to low, cover, and cook for 15 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

While the rice is cooking, prepare the vinegar mixture by heating the rice vinegar, sugar, and salt in a small saucepan over low heat until the sugar dissolves. Do not boil.

Transfer the cooked rice to a large bowl, gently folding in the vinegar mixture while fanning the rice to cool it. Let it cool to room temperature.

Slice the hamachi fillet into thin slices, approximately 3-4 mm thick, and about 2 inches long.

Wet your hands with water to prevent the rice from sticking. Take a small amount of sushi rice (about 20-25 grams) and form it into an oval shape about the size and shape of an adult thumb.
