Ingredients

  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 2 medium, diced carrots
  • 2 diced celery stalks
  • 3 cloves, minced garlic
  • 200 grams, sliced smoked sausage
  • 200 grams, diced ham
  • 1 cup dried lentils
  • 6 cups chicken broth
  • 1 14-ounce can diced tomatoes
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon (or to taste) salt
  • 2 tablespoons, chopped (optional for garnish) fresh parsley

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables start to soften.

Step 3

Add the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Stir in the sliced smoked sausage and diced ham. Cook for 3-4 minutes to lightly brown the meats.

Step 5

Rinse the lentils under cold water and pick out any debris. Add the rinsed lentils to the pot.

Step 6

Pour in the chicken broth and diced tomatoes (with their juice). Stir to combine.

Step 7

Add the bay leaf, dried thyme, ground black pepper, and salt. Bring the mixture to a boil.

Step 8

Reduce the heat to low and cover the pot. Simmer for 30-35 minutes, stirring occasionally, until the lentils are tender.

Step 9

Taste the soup and adjust the seasoning as needed. Remove the bay leaf before serving.

Step 10

Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot with crusty bread or crackers.
