Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 tablespoon Granulated sugar
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 cup Whole milk
  • 0.25 cups Unsalted butter, melted and cooled
  • 2 pieces Large eggs
  • 1 cup Shredded cheddar cheese
  • 1 cup Diced cooked ham or cooked sausage crumbles
  • 0.25 cup Chopped green onions (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line it with paper liners.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, and black pepper.

Step 3

In a separate bowl, whisk together the milk, melted butter, and eggs until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; the batter will be slightly lumpy.

Step 5

Fold in the shredded cheddar cheese, diced ham or sausage, and green onions, if using.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Step 8

Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
