Ingredients

  • 12 slices Deli ham slices
  • 4 cups Baby spinach leaves
  • 6 pieces Large eggs
  • 0.25 cups Heavy cream
  • 1 cup Shredded Swiss cheese
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Olive oil
  • 0 Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin with cooking spray.

Step 2

Heat olive oil in a skillet over medium heat. Add baby spinach and sauté for 2-3 minutes until wilted. Remove from heat and set aside to cool slightly.

Step 3

Gently press one slice of deli ham into each muffin cup, shaping it to form a small bowl. The edges may stick up slightly, which is fine.

Step 4

In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.

Step 5

Divide the sautéed spinach evenly among the ham cups in the muffin tin.

Step 6

Pour the egg mixture evenly into the ham cups, filling each about 3/4 full.

Step 7

Top each cup with a sprinkle of shredded Swiss cheese.

Step 8

Bake in the preheated oven for 18-20 minutes, or until the egg mixture is set and the cheese is melted and bubbly.

Step 9

Remove from the oven and let the cups cool in the pan for 5 minutes. Carefully remove each cup using a small spatula or butter knife.

Step 10

Serve warm and enjoy! These mini cups can also be stored in an airtight container in the refrigerator for up to 3 days and reheated as needed.
