In a large mixing bowl, whisk together the flour, sugar, salt, and instant yeast.
Slowly add the warm milk and the egg to the dry ingredients, mixing until the dough comes together. Knead the dough for 8-10 minutes until smooth and elastic.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
On a clean surface, roll out the cold butter into a rectangle approximately 20x15 cm. Chill it in the refrigerator while the dough rests.
Roll the chilled dough into a rectangle twice the length of the butter rectangle. Place the butter on one half of the dough, fold the other half of the dough over, and seal the edges tightly.
Roll out the dough into a longer rectangle, then fold it into thirds like a letter. This is the first turn. Wrap in plastic wrap and chill for 30 minutes. Repeat this process two more times, chilling between turns.
