Ingredients

  • 250 g All-purpose flour
  • 2 tsp Baking powder
  • 0.5 tsp Salt
  • 1 tbsp Granulated sugar
  • 2 large Eggs
  • 120 ml Milk
  • 75 g Unsalted butter (melted)
  • 150 g Cooked ham (diced)
  • 100 g Cheddar cheese (grated)
  • 100 g Canned pineapple chunks (drained and chopped)
  • 1 tbsp Chopped fresh parsley (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a 12-cup muffin tin with paper liners or lightly grease it.

Step 2

In a large mixing bowl, sift together the flour, baking powder, and salt. Stir in the sugar.

Step 3

In a separate bowl, whisk together the eggs, milk, and melted butter until fully combined.

Step 4

Create a well in the center of the dry ingredients and pour the wet ingredients into it. Gently mix until just combined. Avoid overmixing to keep the muffins tender.

Step 5

Fold in the diced ham, grated cheddar cheese, and chopped pineapple chunks. If desired, add the chopped parsley for extra flavor.

Step 6

Spoon the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. These muffins are best enjoyed within 2-3 days but can be stored in an airtight container or frozen for later.
