  • 1 whole ham bone
  • 1 medium onion
  • 3 medium carrots
  • 3 medium celery stalks

  • 1 whole bay leaf
  • 8 cups vegetable broth or chicken broth

  • 0.5 teaspoons black pepper
  • 1 cup cooked ham, diced (optional)

Directions

Step 1

Place the ham bone in a large stockpot and add the vegetable broth or chicken broth.

Step 2

Peel and dice the onion, carrots, and potatoes. Slice the celery stalks. Mince the garlic cloves.

Step 3

Add the diced onion, carrots, celery, garlic, and bay leaf to the pot with the ham bone.

Pour the canned diced tomatoes, including their liquid, into the pot.
