Ingredients

  • 2 tablespoons Butter
  • 1 medium Onion, finely diced
  • 2 cloves Garlic, minced
  • 4 cups Potatoes, peeled and diced
  • 2 cups Ham, diced
  • 4 cups Chicken broth
  • 2 cups Milk
  • 2 tablespoons All-purpose flour
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Cheddar cheese, shredded (optional)
  • 2 stalks Green onions, sliced (for garnish)

Directions

Step 1

In a large pot, melt the butter over medium heat. Add the diced onion and cook until translucent and softened, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 2

Stir in the diced potatoes and ham, then pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook until the potatoes are tender, about 15-20 minutes.

Step 3

In a small bowl, whisk together the milk and flour until smooth. Gradually stir the mixture into the soup. Simmer for about 5 minutes, stirring frequently, until the soup thickens.

Step 4

Reduce the heat to low, then stir in the heavy cream. Season with salt and black pepper to taste. If desired, add the cheddar cheese and stir until melted and creamy.

Step 5

Serve the soup hot, garnished with sliced green onions. Enjoy!
