Ingredients

  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 80 grams unsalted butter, cold and cubed
  • 150 grams cooked and mashed potatoes
  • 100 grams cooked ham, diced
  • 50 grams cheddar cheese, shredded
  • 120 milliliters buttermilk
  • 1 egg, beaten (for egg wash)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Step 3

Add the cold, cubed butter to the dry ingredients. Using your fingers or a pastry cutter, work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Stir in the mashed potatoes, diced ham, and shredded cheddar cheese. Mix until evenly distributed.

Step 5

Gradually pour in the buttermilk and gently mix until a soft dough forms. Do not overmix; the dough should be slightly sticky but manageable.

Step 6

Turn the dough out onto a lightly floured surface and gently pat it into a round disk about 2 cm (3/4 inch) thick.

Step 7

Use a round biscuit cutter or a knife to cut the dough into 8 equal portions, such as wedges or circles, and place them onto the prepared baking sheet.

Step 8

Brush the tops of the scones with the beaten egg to give them a golden finish while baking.

Step 9

Bake in the preheated oven for 18-20 minutes, or until the scones are puffed and golden brown.

Step 10

Remove the scones from the oven and allow them to cool slightly on a wire rack before serving. Enjoy warm or at room temperature.
