Ingredients

  • 4 pieces Ham slices
  • 4 pieces Cheddar cheese slices
  • 4 slices Sandwich bread
  • 2 tablespoons Unsalted butter
  • 2 cups Green cabbage
  • 1 small Carrot
  • 0.25 cup Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Apple cider vinegar
  • 1 teaspoon Sugar
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper

Directions

Step 1

Prepare the coleslaw: Finely shred the green cabbage and grate the carrot using a box grater or food processor. Add them to a large mixing bowl.

Step 2

In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper to form the coleslaw dressing.

Step 3

Pour the dressing over the cabbage and carrot mixture. Toss until the vegetables are evenly coated. Cover and refrigerate while preparing the rest of the sandwich.

Step 4

Butter one side of each slice of bread using the unsalted butter.

Step 5

Heat a skillet or griddle over medium heat. Place two slices of bread, buttered side down, in the skillet.

Step 6

Add two slices of ham and two slices of cheese on top of each piece of bread in the skillet.

Step 7

Top with the remaining slices of bread, buttered side up. Cook for 2–3 minutes, pressing gently with a spatula, until the bottom is golden brown.

Step 8

Carefully flip the sandwiches and cook the other side for another 2–3 minutes, or until the bread is golden and the cheese is melted.

Step 9

Remove the sandwiches from the skillet, slice them in half if desired, and serve with a generous portion of the chilled coleslaw on the side or inside the sandwich for extra crunch.
