Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Lightly spread mayonnaise on one side of each slice of bread. For extra flavor, add a thin layer of mustard on half of the slices if desired.
Layer a slice of ham on top of the mayonnaise side of four bread slices. Top each with a slice of cheddar cheese followed by another slice of ham.
Place the remaining bread slices on top with the mayonnaise side facing inwards to form a sandwich.
Melt the butter in a small bowl and use a pastry brush to lightly coat the outside of each sandwich with butter. Sprinkle each side with a pinch of salt and black pepper.
Place the sandwiches on the prepared baking sheet and bake for 12-15 minutes, flipping halfway through, until the bread is golden and crispy and the cheese is melted.
Remove the sandwiches from the oven and let them cool slightly before slicing in half if desired. Serve warm!
