Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.75 cup buttermilk
  • 1 tablespoon honey
  • 8 slices sliced deli ham
  • 4 slices cheddar cheese, sliced
  • 1 large egg
  • 1 tablespoon milk

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.

Step 3

Add cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour until it resembles coarse crumbs.

Step 4

In a small bowl, combine buttermilk and honey. Pour this mixture into the dry ingredients and stir until just combined. Do not overmix.

Step 5

Turn the dough out onto a lightly floured surface and gently knead until it comes together. Roll it out to about 1/2-inch thickness.

Step 6

Using a biscuit cutter or the rim of a glass, cut out biscuits (about 8) and place them on the prepared baking sheet.

Step 7

In a small bowl, beat the egg and milk together for an egg wash. Brush the tops of the biscuits with the egg wash.

Step 8

Bake for 12-15 minutes or until the biscuits are golden brown and fully baked. Remove from the oven and allow to cool slightly.

Step 9

While the biscuits are baking, heat a skillet over medium heat and lightly brown the ham slices.

Step 10

Once baked, slice each biscuit in half horizontally. Layer a slice of cheese and two slices of ham on the bottom half of each biscuit.

Step 11

Place the top half of the biscuit over the fillings.

Step 12

Serve the biscuit sandwiches warm, and enjoy!
