Ingredients

  • 1 pound dried great northern beans
  • 1 piece or cup ham bone or diced ham
  • 1 medium onion, diced
  • 2 medium carrots, peeled and sliced
  • 2 medium celery stalks, chopped
  • 2 cloves minced garlic
  • 6 cups chicken broth
  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Rinse and sort the dried beans to remove any debris or damaged beans.

Step 2

In a large bowl, soak the beans overnight in enough water to cover them. Drain and rinse the beans before cooking.

Step 3

Place the drained beans in the crock pot along with the ham bone (or diced ham), diced onion, sliced carrots, chopped celery, and minced garlic.

Step 4

Pour the chicken broth into the crock pot to cover the ingredients.

Step 5

Add the bay leaf, dried thyme, salt, and black pepper to the crock pot. Stir everything gently to combine.

Step 6

Cover the crock pot and cook on low for 8 hours or until the beans are tender and the flavors are well combined.

Step 7

Once cooked, remove the ham bone (if used), shred any remaining ham from the bone, and return the meat to the crock pot. Discard the bone.

Step 8

Taste the soup and adjust the seasoning with additional salt and pepper, if needed.

Step 9

Ladle the ham and beans into bowls and garnish with chopped fresh parsley, if desired.

Step 10

Serve warm with crusty bread or cornbread for a complete meal.
