Ingredients

  • 4 pieces halibut fillets
  • 2 cups cherry tomatoes
  • 0.5 cup kalamata olives
  • 2 tablespoons capers
  • 4 large garlic cloves
  • 1 medium red onion
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley
  • 1 large lemon
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the halibut fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper, then set aside.

Step 3

Slice the cherry tomatoes in half, thinly slice the red onion, and finely mince the garlic cloves.

Step 4

In a large mixing bowl, combine the cherry tomatoes, kalamata olives, capers, red onion, minced garlic, olive oil, dried oregano, and dried thyme. Toss to evenly coat the ingredients in olive oil and spices.

Step 5

Place the seasoned halibut fillets in a baking dish large enough to hold them in a single layer.

Step 6

Spread the tomato and olive mixture evenly over and around the halibut fillets.

Step 7

Slice the lemon into thin rounds and place them on top of the halibut and the tomato mixture.

Step 8

Bake the dish in the preheated oven for 20-25 minutes, or until the halibut flakes easily with a fork and is opaque throughout.

Step 9

Remove the baking dish from the oven and sprinkle freshly chopped parsley over the halibut and vegetables.

Step 10

Serve the halibut warm with a side of crusty bread, rice, or a fresh green salad.
