Ingredients

  • 4 pieces (6 ounces each) Halibut fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 3 Garlic cloves, minced
  • 8 cups Fresh spinach, roughly chopped
  • 0.5 cup Heavy cream
  • 0.25 cup Parmesan cheese, grated
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Nutmeg, ground

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the halibut fillets dry with paper towels. Season both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 3

Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat. Once the oil is hot, sear the halibut fillets for 2-3 minutes per side until golden brown. Remove the fillets from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and add butter. Once melted, add the minced garlic and cook for 1 minute until fragrant.
