Ingredients

  • 4 pieces haddock fillets
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cups heavy cream
  • 0.5 cups Parmesan cheese, grated
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 0.5 teaspoons garlic powder
  • 0.5 cups breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons parsley, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish large enough to hold the haddock fillets in a single layer.

Step 2

Pat the haddock fillets dry with paper towels and season them with a pinch of salt and pepper. Arrange them in the prepared baking dish.

Step 3

In a medium saucepan, melt 3 tablespoons of butter over medium heat. Once melted, whisk in the flour to form a smooth paste, cooking for 1-2 minutes to remove the raw flour taste.

Step 4

Gradually whisk in the milk and heavy cream, continuing to stir until the mixture is smooth and begins to thicken, about 3-4 minutes.

Step 5

Stir in the grated Parmesan cheese, Dijon mustard, lemon juice, garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix until the cheese is melted and the sauce is creamy and smooth.

Step 6

Pour the sauce evenly over the haddock fillets in the baking dish.

Step 7

In a small bowl, combine the breadcrumbs, olive oil, and a pinch of salt and pepper. Mix until the breadcrumbs are evenly coated. Sprinkle the breadcrumb mixture over the top of the sauce-covered haddock fillets.

Step 8

Bake the dish in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork and the breadcrumb topping is golden brown.

Step 9

Remove from the oven and let the dish rest for 5 minutes before serving. Garnish with chopped parsley, if desired.

Step 10

Serve the Haddock Supreme hot, alongside steamed vegetables or a fresh green salad.
