Ingredients

  • 10 whole Habanero peppers
  • 3 cloves Garlic
  • 0.5 medium White onion
  • 1 medium Carrot
  • 0.5 cups White vinegar
  • 2 tablespoons Fresh lime juice
  • 1 teaspoons Salt
  • 1 teaspoons Sugar
  • 1 tablespoons Olive oil
  • 0.5 cups Water

Directions

Step 1

Carefully remove the stems from the habanero peppers. If you want to reduce the heat slightly, you can also remove the seeds and membranes using gloves to protect your hands.

Step 2

Peel and roughly chop the garlic cloves. Dice the white onion into small chunks. Slice the carrot into thin rounds for quicker cooking.

Step 3

In a medium-sized saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, and sliced carrot. Sauté for 5-7 minutes, or until the onion becomes soft and translucent.

Step 4

Add the habanero peppers to the saucepan and cook for another 2-3 minutes, stirring frequently.

Pour in the white vinegar, water, salt, and sugar. Bring the mixture to a boil, then reduce the heat to low and simmer for about 5 minutes. The vegetables should be tender and the peppers softened.
