  • 3 medium roma tomatoes

  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 4 cups chicken broth
  • 3 medium golden potatoes
  • 1 large zucchini
  • 0.25 cup fresh cilantro
  • 1 medium lime

Directions

Step 1

Cut the pork shoulder into 1-inch cubes. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Set aside.

Step 2

Heat a large pot or Dutch oven over medium-high heat. Add the olive oil and brown the pork in batches, ensuring that each piece is seared on all sides. Remove the pork and set aside.

Step 3

Dice the onion and mince the garlic. In the same pot, reduce the heat to medium and sauté the onion until soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute, stirring frequently.
