Ingredients

  • 4 pieces Bone-in pork chops
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 3 cloves Garlic cloves
  • 2 tablespoons All-purpose flour
  • 1 cup Guinness stout
  • 1 cup Chicken stock
  • 1 teaspoon Thyme leaves
  • 1 tablespoon Heavy cream
  • 2 tablespoons Parsley (optional, for garnish)

Directions

Step 1

Season the pork chops on both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for 3-4 minutes per side until golden brown. Remove and set aside on a plate.

Step 3

Peel and thinly slice the onion. Mince the garlic cloves.

Step 4

In the same skillet, reduce the heat to medium and add the sliced onions. Sauté for 5-7 minutes until softened and beginning to caramelize.

Step 5

Add the minced garlic to the skillet and cook for 1 minute until fragrant.

Step 6

Sprinkle the flour over the onions and garlic, stirring well to coat. Cook for another 1-2 minutes to eliminate the raw flour taste.

Step 7

Slowly pour in the Guinness stout while stirring to deglaze the pan, scraping up any browned bits stuck to the bottom of the skillet.

Step 8

Add the chicken stock and thyme leaves. Stir to combine, then return the pork chops to the skillet.

Step 9

Reduce the heat to low, cover, and let the pork chops simmer for 20-25 minutes, or until they reach an internal temperature of 145°F (63°C).

Step 10

Stir in the heavy cream during the last 5 minutes of cooking to enrich the gravy.

Step 11

Taste and adjust the seasoning with additional salt and pepper if needed.

Step 12

Serve the pork chops hot, smothered in the Guinness gravy. Garnish with freshly chopped parsley, if desired.
